Kheer/Phirni/Rice Pudding

You will love my take on this sweet treat! Kheer or Phirni is a Rice pudding from India made by first boiling then simmering milk, sugar, and rice. I have flavored it with cardamom, saffron, cashews, almonds. It is typically served during a meal or as a dessert.

Equipment

  • Large nonstick saucepan

Ingredients
  

  • 3/4 Gallon Gallon of whole milk You can use a gallon of milk or more but will have to cook it longer
  • 10 tbsp Sugar Use more or less sugar per personal taste
  • 1/2 cup Basmati rice presoaked in water for 30 mins then drained
  • 10 pcs Almonds blanched in warm water and peeled
  • 10 pcs Cashew nuts cut into small pcs
  • 1 tbsp Ground Cardamom removed from pod and grind or get from store
  • 4 strands Saffron strands soaked in 1/4 cup of warm milk

Instructions
 

  • Heat a large saucepan, add milk. Once milk starts to bubble up and reaches a boil reduce heat to medium.
  • Be sure to constantly stir milk with a wooden spatula so that it doesn't stick.
  • Now add remaining ingredients, after setting aside few almonds, cashews and cardamom for garnish.
  • Continue stirring milk until it thickens about 45 minutes
  • Once the Kheer/Pudding is thick n creamy its done!
  • Wallah! your delicious Kheer/Phirni/Rice Pudding is ready!

Notes

Refrigerate Kheer/Rice Pudding for 2 to 3 hours then serve. Tastes great warm as well!

  • Glass mixing bowl, Nonstick saucepan

Ingredients
  

  • 3 cups split gram/Besan flour
  • 3 cups water
  • 2 tbsp veg.oil
  • 1 tbsp mustard seeds Available at Indian grocery stores & Amazon
  • 8 curry leaves Available at Indian grocery stores & Amazon
  • 1/4 tsp hing/asafoetida Available at Indian grocery stores & Amazon
  • 2 tbsp chopped ginger
  • 1 finely chopped green chili
  • 1/2 tsp turmeric powder Available at Indian grocery stores & Amazon
  • 1 tsp red chili powder Available at Indian grocery stores & Amazon
  • 1/2 tsp amchur/dry mango powder Available at Indian grocery stores & Amazon
  • salt to taste

Instructions
 

  • In a mixing bowl add split gram flour/Besan and water. Mix well creating a thin slurry. Set aside.
  • Preheat sauce pan then add oil. Once the oil is hot reduce heat and add mustard seeds. Once they start popping add hing/asafoetida.
  • Now add curry leaves, green chili, ginger, turmeric & red chili powders. Mix well.
  • Next add gram flour/besan slurry & amchur/dry mango powder. Mix well & still continuously for 2 minutes. This is to ensure there are no lumps.
  • The mixture will start to thicken. Make sure its not too thick like a paste. Add water as needed.
  • Transfer to a serving bowl. Enjoy with Fafda, Pita or Corn tortilla Chips.
  • Wallah! Your Fafda Chutney/dipping sauce is ready.

Notes

This delicious Fafda Chutney or dipping sauce can be stored in the fridge for about a week. Just warm it up when you are ready to eat it again!  Enjoy!

  • 1 cup fresh pineapple chunks

  • 1 juice of fresh lemon, seeds removed
  • 1/2 cup fresh chopped cilantro/coriander leaves
  • 1 tbsp finely chopped fresh ginger
  • 1/2 finely chopped green chili
  • salt n black pepper to taste

Instructions
 

  • In a glass mixing bowl place all the ingredients mentioned above. Mix well.
  • Cover bowl with plastic wrap and store in refrigerator. Enjoy for up to 3 days.
  • Wallah! Your fruit chaat is ready to be served!
