Aloo Palak - Steam Fried Potatoes & Spinach
Ingredients
- 1 large bunch/200 grams of baby spinach leaves - cut into thin ribbons
- 3 potatoes - peeled, cut into small cubes & soaked in water for 30 minutes
- 1 red onion - chopped
- 3 cloves of garlic - chopped into larger pieces
- 1 tbsp ginger - roughly chopped
- 2 tbsp mustard oil
- 1 tbsp cumin seeds
- 2 dry red chilies - halved
- Pinch of turmeric powder
- 1/2 tsp Red Kashmiri chili powder
- 1/2 tsp coriander/dhania powder
- salt to taste
Instructions
- Heat a saucepan to medium high
- Add mustard oil. Once oil is hot add cumin seeds
- As soon as cumin seeds starts spluttering/popping add dry red chilies
- Now add potato cubes and stir fry for 3 minutes until they golden brown
- Push potatoes to one side, add chopped onion and saute for 1 minute, then add minced garlic & ginger. Mix well
- Toss in turmeric powder, Kashmiri chili powder, coriander powder and salt
- Mix well then layer baby spinach over potatoes
- Cover with lid and let the steam from spinach cook & flavor the potatoes
- After 3 minutes open lid, mix well. Simmer for 2 more minutes
- Your delicious Steam Fried Aloo Palak is ready!
