Masala Mushroom-Restaurant Style White Mushroom Curry

Mushrooms cooked in a delicious cashew nut-tomato gravy. This dish is enhanced with spices like ground coriander, cumin and garam masala. Definitely a zesty crowd pleaser!

Ingredients
  

  • 2 Tbsp Mustard oil
  • 1 Tsp Cumin seeds
  • 1 Small cinnamon stick
  • 3 Green cardamom pods
  • 3 Cloves
  • 1 Onion - chopped
  • 2 Large coves of garlic - minced
  • 1 Tbsp green chili-ginger paste
  • 1/2 Cup tomato sauce
  • 1/2 Tsp Red chili powder
  • 1/4 Tsp Turmeric powder
  • 1 Tbsp cumin-coriander powder mix
  • 500 Grams White/Button Mushrooms - cleaned, stems removed then sliced
  • 4 Tbsp ground cashew nuts
  • 1/4 Tsp Garam Masala
  • 3/4 Cup water - divided 1/2 cup & 1/4 cup
  • Slivered (thin) ginger slices
  • Salt to taste

Instructions
 

  • In a preheated non stick sauce pan heat mustard oil
  • Once oil is hot reduce heat to medium, add chopped onion
  • Saute for 2 minutes until translucent then add minced garlic
  • After 30 seconds add cinnamon stick, green cardamom & cloves
  • As soon as cumin seeds start spluttering add tomato sauce. Mix well
  • Next add red chili powder, ground turmeric & cumin-coriander powder mix
  • Add ground cashew nuts (powder)
  • Now add white/button mushroom slices
  • Add salt to taste, mix well
  • Saute for 2 minutes then stir in 1/2 cup water
  • Reduce heat to low & simmer for 2 minutes
  • Now add 1/4 cup water and garam masala, simmer for a minute more
  • Walla! Your delicious Mushroom Masala is ready!
  • Transfer to serving bowl/dish, garnish with slivered ginger slices
  • Enjoy with Naan or other Indian flatbread or steamed Basmati rice
