My Cheesy Baked Eggplant drove everyone crazy! They ate it all & wanted more! Eggplant sliced in roundels layered with tomato sauce, mozzarella cheese, Italian herbs & more. Double stacked for double the pleasure!

  • 1 Casserole Dish
  • 1 Mixing bowl

Ingredients
  

Main Ingredients

  • 2 large eggplants - cut into rounds/roundels
  • 1/2 cup Extra Virgin Olive oil
  • salt & crushed black pepper to taste
  • 1 LB/454 grams shredded Mozzarella cheese
  • 1.5 tbsp Italian seasoning mix - dry basil, thyme & oregano
  • Fresh flat leaf parsley for garnish - cut thin/chiffonade

Ingredients For Tomato Sauce

  • 2 cups tomato sauce
  • 1/2 tsp roasted garlic powder
  • Salt, crushed black pepper & red chili powder to taste. You can use paprika instead for less heat
  • 1/2 tbsp Italian seasoning

Instructions
 

  • Preheat oven to 375*F
  • Layer large sheet pan with parchment paper
  • Slice 2 Eggplants into thick roundels & spread them on the sheet pan
  • Drizzle olive oil, sprinkle salt & pepper on eggplant slices, on both sides
  • Bake eggplant slices in oven for 20 minutes - turning once after 10 mins
  • While eggplant is baking prepare sauce my mixing ingredients listed above for sauce in a bowl, set aside
  • After 20 minutes remove eggplant from oven. Let cool for 20 minutes
  • Next coat inside of an oven proof casserole dish with some of the seasoned tomato sauce
  • Place baked eggplant slices on top of sauce - first layer
  • Sprinkle with Italian seasoning mix
  • Layer with shredded Mozzarella cheese generously
  • Place remaining eggplant slices on top of the ones in the baking dish - 2nd layer Repeat same process again
  • Now place casserole dish in the oven. Bake for 375* F for 15 minutes
  • Walla! Your delicious Cheesy Baked Eggplant dish is done!
  • Transfer 1 Baked Eggplant stack to a plate
  • Garnish with freshly chopped flatleaf parsley. Bon Appetit!
