My 'No Crust' Spinach Quiche tastes amazing & is very easy to make! Ingredients & Instructions are listed below

Ingredients
  

  • 2 cups fresh shredded spinach leaves
  • 1 small onion - chopped
  • 1 whole green bell pepper - julienned
  • 3 cloves garlic - minced
  • 1 tbsp olive oil
  • 5 eggs - whisked in a bowl
  • 1/2 cup sharp cheddar cheese - shredded
  • 1/2 cup mozzarella cheese - shredded
  • 1/2 cup milk
  • salt & crushed black pepper to taste
  • red pepper flakes to taste - optional

Instructions
 

  • Preheat oven to 350*F
  • In a preheated nonstick pan add olive oil
  • Once oil is hot add spinach, bell pepper, onion,& garlic
  • Saute on low heat for 8 minutes. Set aside
  • In a mixing bowl add eggs, sharp cheddar, mozzarella cheeses & milk
  • Add salt, black pepper, red pepper flakes. Whisk well
  • Next add sauted spinach mixture to the bowl. Mix everything well
  • Transfer mixture from bowl to baking dish & place in preheated oven
  • Remove baking dish after 45 minutes. Let cool then cut into triangular pieces
  • Serve 1 piece of our now ready Crust-less Spinach Quiche per plate
