Lamb Korma – How to make Lamb Curry with Yogurt

Lamb Korma

A zesty & flavorful dish originating from India, served at Indian restaurants, is a super hit! Typically this amazing dish its made with mutton, chicken or veggies. I have made it with leg of lamb straight from the butcher. It differs from other meat curries in that yogurt is used to thicken & enhance the curry flavors.

Equipment

  • Large nonstick saucepan, pot or Dutch oven

Ingredients
  

  • 3 lbs leg of lamb, fat trimmed and cut into chunks, with bones & bone marrow
  • 5 tbsp veg./cooking oil like canola or sunflower oil
  • 2 whole onions - finely chopped
  • 4 cloves garlic - minced
  • 2 whole tomatoes - diced
  • 2 tbsp green chili & ginger mince
  • 2 whole bay leaves
  • 3 tbsp cumin-coriander powder mix
  • 1 tsp red chili powder
  • 1/2 tsp ground turmeric
  • 1/4 tsp garam masala - store bought
  • 1/2 cup plain yogurt - whisked
  • 1/2 tsp dry fenugreek leaves - hand crushed
  • 1/2 cup fresh cilantro/coriander- roughly chopped
  • 1 tsp mix of cloves, cardamom seeds & 1 cinnamon stick
  • salt & crushed black pepper to taste
  • 2 cups water, add more water if needed

Instructions
 

  • Heat veg. /cooking oil in large nonstick pan
  • Once oil is hot reduce flame to medium heat, add chopped onions
  • Shallow fry onions for 2 to 3 minutes until almost crispy, then add garlic
  • Now add lamb pieces, saute until light brown. About 3 minutes
  • After 30 seconds add bay leaves, cinnamon, cloves & cardamom seeds
  • Mix well then add ginger-green chili mince, turmeric, chili powder
  • Saute for a minute then add tomatoes. Let tomatoes cook for 2 minutes
  • Mush tomatoes with spatula, then add yogurt stirring it in quickly so it doesn't curdle. Now add salt & crushed black pepper to taste, mix well
  • Add water and half the cilantro leaves. Mix well, cover with lid and let simmer for 1 hour
  • After 1st. hour open lid add garam masala, mix well. Cover and let simmer for another hour or until lamb is 'falling of the bone' tender
  • Finally, open lid and transfer delicious Lamb Korma to serving bowl
  • Wallah! Your Lamb Korma is ready! Serve with steamed Basmati rice or Naan or other Indian flatbreads
