Mutton Biryani - Lamb Biryani Recipe

Leg of lamb pcs cooking in a spicy, tomato-yogurt gravy then layered with Basmati rice and slow cooked to perfection!

Equipment

  • 1 large pot to cook rice
  • 1 sauce pan to cook mutton/lamb curry

Ingredients
  

  • 3 LBS baby lamb - excess fat removed, cut into bite size pcs
  • 3 onions - thinly sliced
  • 3 cloves of garlic - chopped
  • 2 tbsp green chilli-ginger paste
  • cooking oil - 2 cups + 2 Tbsp
  • 2 bay leaves
  • 4 Tbsp Biryani Masala - https://amzn.to/3SR75mb
  • 2 tomatoes - diced
  • 450 ml water to make lamb curry/gravy
  • 1 cup plain yogurt - whisked
  • 3 TBSP chopped cilantro/coriander
  • 2.5 cups long grain Basmati rice
  • 4 cups water to cook/boil rice
  • 1 tsp salt for rice

Instructions
 

Cooking Mutton Curry

  • In a hot frying pan add 2 cups cooking oil
  • Fry sliced onion in oil, once hot, until golden brown
  • Remove fried onions, set aside
  • In a large saucepan/pot add 2 TBSP cooking oil
  • Add half the fried onion slices & bay leaves
  • Next add minced garlic. Saute for 15 seconds
  • Now add green chili-ginger paste, mix well
  • Add lamb pcs and sear on high for 3 minutes, until brown
  • Add biryani masala. Stir fry for 2 minutes to coat lamb pcs well
  • Toss in diced tomatoes, saute for 2 minutes,
  • Reduce flame to low then mix in yogurt quickly
  • Let simmer for 2 minutes then add 450 ml water. Mix well
  • Now cover with lid and cook/simmer lamb curry for 1 hour or until tender

Cooking Rice for Biryani

  • While lamb is cooking, bring to boil 4 cups of water
  • Add rice and salt. Give it quick stir with spatula
  • Cook rice until almost done-al dente, drain excess water, set aside

Layering & Steam Cooking Biryani ( This process is called Dum)

  • After an hour check to make sure lamb is cooked & tender
  • Adjust seasoning as necessary then remove half the lamb to a bowl
  • Layer half the cooked rice on top of the lamb curry that is in the pot
  • Garnish with remaining fried onion slices and cilantro/coriander
  • Repeat process with remaining rice and lamb that we set aside
  • Finally, cover and let simmer for 6 minutes to let the aromas permeate
  • Walla! Your delicious Mutton/Lamb Biryani is ready!
  • Transfer to serving platter as needed
  • Serve with plain yogurt or Cucumber Raita on the side. Bon Appetit!
