Wash & drain lamb pcs
In a hot sauce pan add mustard oil. Once oil is hot add cumin seeds
As cumin seeds begin to splutter add Asafoetida/hing
Once hot add remaining tempering spices listed above . Mix well
Next add lamb pcs and stir fry on high heat for 3 minutes, until brown
Lower heat to medium add Kashmiri Chilli powder
Mix well and cook for 3 minutes for meat to pick up Kashmiri chilli color
Add green cardamom/elaichi powder. Stir fry for 30 seconds
Now add sonth/dry ginger powder or minced ginger as substitute
Let simmer for 2 minutes on low flame then add whisked yogurt
Mix well, cover and simmer for 3 minutes
Open lid and add garam masala & 450 ml water
Mix well, cover & simmer for 45 minutes or until lamb is very tender
Stir few times while its simmering
