Dill Rice With Lima Beans - Persian Dill Rice
Equipment
- 1 large saucepan/pot
Ingredients
- 2 Cups Basmati rice
- 2 Tsp salt
- 3 Tbsp Canola Oil
- 3 Tbsp Olive oil
- 1 Large or 2 small potatoes - Peeled and sliced into roundels
- 1 Cup precooked Lima Beans
- 1 cup fresh dill
- Ample water to cook rice al dente
Instructions
- Soak Basmati rice water for 10 minutes
- Peel and slice potatoes into roundels
- Boil 6 cups of water in a large saucepan
- Add 2 tbsp canola oil to the boiling water
- Now drain soaked rice and add it to the saucepan
- Cook rice until el dente about 7 minutes
- Drain water from cooked rice, remove from saucepan, set aside
- Next layer potato roundels in sauce pan
- Drizzle with olive oil, then layer half of the cooked rice over it
- Add half the butter to rice
- Next layer half the lima beans and fresh dill
- Repeat the process to have a second layer of rice, butter, lima beans and fresh dill
- Wrap saucepan lid in a towel and place it over the saucepan
- Simmer on medium low flame for 5 minutes
- Wala! Your delicious Dill Rice with Lima Beans is ready!
- Transfer to serving dish and serve with cooked potato roundels
