Pan Seared Salmon With Spinach & Mushrooms
Equipment
- 1 Nonstick Saucepan
Ingredients
- 2 small salmon fillets
- 400 grams bella/brown mushrooms - sliced
- 2 cups baby spinach leaves - prewashed
- 1 shallot - minced
- 2 large cloves of garlic - minced
- 2 tbsp unsalted butter
- 1tbsp fresh lemon juice
- 1 tbsp dry basil & oregano mix
- salt & crushed black pepper to taste
- 3 tbsp cooking oil
Instructions
- Heat 2 tbsp cooking/veg. oil in a nonstick saucepan on medium high flame
- Add shallots-stir fry until translucent then add garlic. Saute for 30 seconds
- Next add sliced mushrooms, saute mushrooms for 2 minutes
- Now add baby spinach leaves. Stir fry until spinach begins to wilt
- Toss in dry basil & oregano, salt & crushed black pepper
- Mix well and transfer veggies to serving dish
- Cover with aluminum foil to keep warm
- In the same pan add 1 tbsp cooking/veg. oil
- Once oil is hot sear salmon fillets on both sides - 2 minutes per side
- Add unsalted butter to pan. Once butter melts add lemon juice
- Spoon lemon-butter sauce from pan over Salmon
- Place seared/cooked salmon fillets on top of spinach & mushrooms
- Drizzle remaining lemon-butter sauce from pan onto salmon fillets
