Ground Beef Soup With Veggies
Equipment
- 1 Dutch oven or large saucepan
Ingredients
- 1.25 LB ground beef sirloin - 90%lean
- 250 grams pancetta - cut into small pcs
- 1 TBSP olive oil
- 1 onion - diced
- 3 cloves of garlic - minced
- 1 cup carrot - diced
- 1 cup celery - diced
- 1 15 oz. can chopped tomatoes
- 1 potato - peeled & cubed
- 4 cups beef broth
- 6 cups water
- 1TBSP - ground cumin
- salt, crushed black pepper, red chili flakes to taste
- Fresh flat leaf parsley - roughly chopped for garnish
Instructions
- Heat a large Dutch oven or sauce pan on medium flame, add olive oil
- Once oil is hot add pancetta. Cook for 2 to 3 minutes until fat is rendered
- Add ground sirloin beef, sauté until it is almost cooked
- Push beef to one side and add onion, sauté for 2 minutes then add garlic
- Mix well. After 30 seconds add tomatoes
- Cook down tomatoes until they begin to mush, then add potatoes
- Now add salt, black pepper & red chili flakes to taste
- Next add celery, carrot, cook for 2 minutes then add beef broth
- Stir quickly then add water, simmer on low for 5 minutes, add ground cumin
- Mix well and simmer for another 15 minutes to thicken soup
- Cook down tomatoes until they begin to mush, then add potatoes
- Now add salt, black pepper & red chili flakes to taste
- Next add celery, carrot, cook for 2 minutes then add beef broth
- Stir quickly then add water, simmer on low for 5 minutes, add ground cumin
- Mix well and simmer for another 15 minutes to thicken soup
- Your delicious soup is ready to serve!
- Transfer to a bowl and garnish with fresh parsley. Bon Appetit!
