Ingredients
  

Ingredients for Dredging/Coating Chicken

  • 2 LBS chicken breast flattened & cut into 2 inch pieces
  • 3 TBSP all purpose flour
  • Salt & crushed black pepper to taste

Other Ingredients

  • 2 TBSP cooking oil
  • 6 TBSP unsalted butter
  • 6 Large cloves of garlic - minced
  • 1 Cup chicken stock
  • 1 TBSP lemon juice
  • 1 TBSP dry oregano
  • salt & crushed black pepper to taste
  • Freshly chopped flat leaf parsley for garnish

Instructions
 

  • In a bowl dredge/coat chicken with ingredients listed above for it
  • Set dredged chicken aside for 20 minutes
  • Next cooking oil to preheated saucepan
  • Once oil is hot sear/brown dredged chicken pieces for 3 to 4 minutes
  • Remove seared chicken pieces from saucepan once done, set aside
  • Next add butter to pan after reducing heat to medium setting
  • Once butter has melted toss in minced garlic, stir fry for 30 seconds
  • Now deglaze pan by adding chicken stock, mix well
  • Add dry oregano, salt & crushed black pepper
  • Add seared chicken back to the saucepan, mix well, cook for 3 minutes
  • Adjust seasonings to taste then add some freshly chopped parsley
  • Mix well & transfer to serving bowl/dish
  • Garnish with chopped parsley before serving
