Tom Yum Soup
Very popular Thai Soup! Flavored with lemon grass, kaffir lime leaves & galangal,. Garnished with scallion, red chili & cilantro. Hot, Tasty & Delicious!

- 4 cups chicken stock
- 20 easy peel shrimp - deveined, shell removed & set aside
- 8 shiitake mushrooms soaked in water for 30 mins, then sliced . You can use straw mushrooms instead
- 10 kaffir lime leaves - torn into half
- 1 stalk lemon grass - outer layer removed, bruised with back of knife, cut into 3 inch pcs
- 3 tbsp fish sauce
- 3 tbso fresh lime juice
- 1/2 inch galangal. Use ginger if galangal is not available
- 1 scallion/spring onion - thinly slice into roundels
- 3 red chilies - thinly sliced. You can remove seeds if you want it less hot!
- 1 shallot thinly sliced
- Salt & crushed black pepper to taste
- Fresh cilantro/coriander leaves - optional
Place large pot on stove, set at medium, add shrimp shells
Add lemon grass, half the kaffir lime leaves & galangal or ginger
Simmer on low for 6 minutes
After 6 minutes drain stock in a bowl/utensil. Get rid of the aromatics
Now add back clear stock back to pot on stove, add shrimp & shiitake mushroom slices
Add remaining kaffir lime leaves, fish sauce, lime juice
Season with salt & crushed black pepper to taste
Next add half the scallion & red chili slices. Stir well, simmer for 2 minutes
Wallah! Your Tom Yum Soup is ready!
Transfer soup to serving bowl, garnish with remaining scallions, green chili and fresh cilantro leaves. Enjoy!
