Boil 8 cups of water in a separate pot
In a preheated saucepan add olive oil
Keeping the flame on medium setting add chopped onion
Saute for 2 to 3 minutes until soft then add garlic
Stir fry for 30 seconds then deglaze pan with white wine
Add tomato paste. Mix well until oil releases then add chicken stock
Let simmer for 2 minutes then add heavy cream
Now add sun-dried tomatoes
Mix well then add baby spinach . Stir for a minute
Season with salt, black pepper & red chili powder or flakes
Meanwhile add salt & cheese tortellini to water that we have been boiling
After 3 minutes remove tortellini from pot, drain
Add it to Tuscan Sauce in the saucepan. Mix well
Simmer for a minute then transfer to serving bowl/dish
Garnish with grated parmesan cheese and fresh parsley
