Chicken Korma
Step by Step Boneless Chicken Korma Recipe. Chicken thigh pieces cooked in slew of spices, ginger, garlic & green chili paste. Then enhanced with almond/cashew nut paste, fried onions & yogurt. This Royal dish a hit at weddings and tastes fantastic!

- 1 LB boneless chicken thighs bitesize pieces
- 1 Cup vegetable oil
- 1 Cup plain yogurt - whipped
- 2 onions - sliced
- 2 bay leaves
- 6 cloves
- 1 Tsp whole black pepper
- 1 Tbsp garlic paste
- 1 Tbsp green chili & ginger paste
- 8 cashew nuts
- 8 almonds
- 1 Tsp red chili powder
- 1/4 Tsp turmeric powder
In a large nonstick saucepan heat veg. oil
Reduce flame to medium, add onions. Fry until golden brown
Remove fried onions from pan, drain on paper towel. Set aside
Next add bay leaves, cloves & black pepper & garlic paste
Saute for few seconds then add green chili/ginger paste
Grind cashew nuts & almonds together in a grinder. Add to saucepan
Mix well & saute for 2 minutes
Now add chicken pieces. Mix well then add cumin-coriander powder
Add red chili & turmeric powders, salt to taste. Mix well
Now reduce heat and stir in yogurt, making sure it does not curdle
Cover saucepan with lid and simmer on medium-low for 15 minutes
Remove lid and transfer Chicken Korma to serving dish
