Ingredients For Lemon-Balsamic Vinaigrette
- 1/2 cup EVOO = Extra Virgin Olive Oil
- 1 tbsp sharp mustard
- 1 tbsp honey
- 2 tsp capers
- 1 tbsp dry basil leaves
- Juice of 1 lemon
Ingredients For Salad
- 500 grams Organic Mixed Greens - Prewashed
- 1 red onion - thinly sliced
- 1 English cucumber - diced
- 2 cups Chick Peas/Garbanzo Beans - precooked, liquid drained and rinsed
- 1 cup crumbled feta cheese
- 16 grape tomatoes - halved
- 1 red bell pepper/capsicum - julienned
- 1/2 cup Kalamata olives
- 1/2 cup Kalamata olives
- 2 tsp capers
In a small glass jar add ingredients listed under Lemon-Balsamic Vinaigrette. Cover jar with its lid. Shake well. Set aside
In a large glass bowl add all ingredients listed under Salad
Add 2 tbsp of Lemon-Balsamic Vinaigrette that we prepared earlier
Mix well with 2 spatulas to coat salad evenly with vinaigrette
Transfer Mediterranean Salad to serving bowl/s
Garnish with some crumbled feta cheese and parsley
