Preheat oven to 375*F
Rinse Maitake mushroom cluster in running water. Shake off water quickly
Place Maitake mushroom cluster on an 11"X 8" aluminum foil
Next spray maitake mushroom with avocado oil generously
In a small bowl mix salt, crushed black pepper, roasted garlic powder & paprika to prepare seasoning mixture
Sprinkle seasoning mixture all over the Maitake mushroom cluster
Wrap aluminum foil to cover mushroom completely. Place in an ovenproof pan
Place pan with Maitake mushroom in oven, roast for 15 minutes
While mushroom is in the oven prepare dipping sauce by bringing to boil 200 ml water, 1tbsp soy sauce, 1tbsp mirin, 1tbsp dashi/bonito flake mix in a saucepan
Bring dipping sauce mixture to boil then simmer for 1 minute. Drain & set aside
Remove pan from oven & open aluminum foil carefully
Transfer roasted Maitake mushroom to serving dish
Serve with liquid/broth rendered in foil while Mushroom was roasting or with Tempura Dipping Sauce
