Tasty Oven Grilled Pompano Fish
Equipment
- 1 oven grilling rack & tray
- 1 non stick frying pan
Ingredients
Main Ingredient
- 1 whole pompano fish - cleaned, guts removed, tail & fins trimmed
Ingredients for marinade
- 2 tbsp lemon juiced
- 1/4 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp garlic powder
- 1 tsp coriander-cumin powder mix
- 1/4 tsp garam masala
- 1 tsp crushed dry fenugreek leaves
- salt to taste
Other Ingredients
- 2 tbsp cooking oil
- 1 red onion - thinly sliced
- 1 cup thin carrot strips (matchstick size)
Instructions
- Preheat oven to 375*F
- Prepare marinade with ingredients listed above
- Make deep cuts on both side of pompano fish
- Apply marinade to fish on both sides and also inside the cuts
- Place marinated fish on oven grilling rack & place it in baking dish
- Oven grill for 20 minutes
- While the fish is in the oven add 2tbsp cooking oil to frying pan
- Add onion and carrot slices. Stir Fry for 3 minutes
- Season with salt & crushed black pepper
- Transfer veggies to serving platter. Place grilled fish on top of veggies
