Salmon Tacos/Mexican Street Food/Fish Tacos-By Gastro Guru

ZESTY & FLAVORFUL is how I describe my Salmon Taco! Salmon fillets marinated in lime juice, cumin/coriander powder, red chili powder & and salt, pan seared to perfection. Then loaded on top of a warm taco with cabbage slaw, guacamole/avocado, red onion & cilantro. Healthy & oh so delicious!

Equipment

  • Nonstick pan, mixing bowls

Ingredients
  

Marinade for Salmon

  • 1 tbsp Cumin/Coriander powder mix
  • 1 tsp Red chili powder
  • 1 tbsp TBSP Lime juice
  • Salt to taste

For Making Salmon Tacos

  • 2 pcs Soft tortillas warmed up in a hot pan/10 seconds each side
  • 2 pcs Salmon Fillet medium size pcs - I used Atlantic Salmon
  • 2 cups Shredded Cabbage seasoned with salt & fresh of lime juice
  • 1/2 Red onion finely chopped
  • 1 whole Avocado mashed into chucks, seasoned with fresh lemon juice and salt to taste
  • Fresh cilantro leaves roughly chopped for garnish

Instructions
 

Marinating Salmon Fillets

  • First in a small bowl mix ingredients listed above for marinade. Brush salmon fillets with the marinade. Set aside

Preparing Cabbage Slaw

  • Next add salt and lime juice shredded cabbage, set aside

Cooking Salmon Fillets

  • Now heat up a non stick pan, add cooking oil once pan is hot
  • As soon as oil starts to smoke add salmon fillets to pan
  • Pan-Sear Salmon fillets, skin side down, for 2 mins per side
  • While Salmon is cooking mash up avocado with fork.
    Season with salt to taste & lime juice. Set aside
  • Once skin/bottom is crispy and Salmon is cooked remove from pan, set aside

Building Salmon Tacos

  • Now warm 1 soft tortilla in another pan on both sides, transfer to plate
  • Layer warm taco with cabbage slaw
  • Next break 1 salmon fillet into chunks and place on top of cabbage
  • Now add Avocado/Guacamole and half of the chopped red onion
  • Garnish with fresh cilantro. Repeat same process with to build second taco
  • Wallah! Your delicious Salmon Tacos are ready! Bon Appetit!

Notes

Please make sure you cook skin side down when pan searing salmon fillet. Adding  crispy bottom/skin pcs along with rest of salmon fillet will give a nice crunch and added flavor!

  • Wok, Mixing Bowl

Ingredients
  

  • 1.25 LBS Chicken thighs cut into 2 inch pieces
  • 7 OZ Kalbi Sauce/Marinade I have used Seoul Brand
  • 1 TBSP Red Chili powder spicy
  • 1 TBSP Oil to spray on stove top grill or veg. oil
  • 1 - Scallion/Green Onion finely chopped
  • 1 TSP Sesame seeds toasted
  • 1 CUP Jasmine Sticky rice Pre-Cooked

Instructions
 

  • Marinate chicken pieces overnight in Kalbi Sauce
  • Heat Stove Top Grill On high flame then spray with oil
  • Add red chili powder to marinated chicken. Mix well
  • Place marinated chicken pieces on grill and cook each side for 3 minutes or until done
  • Layer serving dish with cooked rice then place cooked Kalbi Chicken pcs on it
  • Garnish with sesame seeds & chopped scallion/green onion
  • Wallah! Your delicious Kalbi Chicken/Korean BBQ Chicken is ready!

Notes

  1. If you use chicken breast add 1 tsp of baking soda to make it tender. No need to add it if using chicken thighs.
  2. This delicious dish can be served as appetizer or as main course.

POTATO & ONION PAKODAS (FRITTERS)

Potato & Red Onion slices, dipped in seasoned Besan aka Gram Flour batter. Then deep fried in veg.oil & sprinkled with Chaat Masala. Crispy and delicious!

  • Mixing bowl, Frying pan/Wok

Ingredients
  

  • 2 large potatoes - peeled and cut into round slices
  • 1 large red onion - peeled & cut into thin round slices
  • 2.5 cups veg. oil - for frying
  • 1 cup Besan aka gram Flour to make batter - available at Indian grocery stores/supermarkets
  • water - as needed to make batter
  • 1 tsp green chili/ginger paste
  • 1 tsp red chili powder
  • 1/4 tsp turmeric powder
  • salt & crushed black pepper to taste
  • 1 tsp Chaat Masala

Instructions
 

Preparing Batter

  • In a mixing bowl add Besan - Gram Flour, salt, black pepper, turmeric powder,green chili/ginger paste, red chili powder. Add water slowly to create a medium consistency batter, neither too thick, nor too liquidy/thin. Now add few drops of veg. oil, mix well.

Frying Potato & Onion Pakodas

  • Heat veg. oil in frying pan/wok. Once oil starts to smoke reduce hit to medium low.
  • Dip potato roundels in the Besan batter, coating each slice well and frying them in batches.
  • Remove potato slices from frying pan once they are golden brown, turning them once. Let them rest in a plate lined with paper towel to soak up access oil.
  • Repeat the above process with onion slices.
  • Once both Potato and Onion Pakodas are done transfer them to a plate/platter. Sprinkle them with Chaat Masala.
  • Wallah! Your delicious Potato and Onion Pakodas (Fritters) are done!

Making Onion Pakodas without batter

  • Another option is to just cut the onion in to thin slices, not roundels, and mixing them with Besan flour and spices. With this method you do not add water or create a batter. Once you mix the onion slices in the dry mixture fry them in clusters. This will create crispy pakodas with each onion slice covered individually with the dry rub. A unique experience in flavor and texture unto itself!

Notes

Potato (Aloo) & Onion Pakodas (fritters) are a popular Indian dish. They sure are a hit at any party! These pakodas can be served as appetizer or main course and are best enjoyed hot, as soon as they are deep fried and plated! Enjoy!
