Cheesy Baked Eggplant

My Cheesy Baked Eggplant drove everyone crazy! They ate it all & wanted more! Eggplant sliced in roundels layered with tomato sauce, mozzarella cheese, Italian herbs & more. Double stacked for double the pleasure!

Equipment

  • 1 Baking Pan/Sheet Pan
  • 1 Casserole Dish
  • 1 Mixing bowl

Ingredients
  

Main Ingredients

  • 2 large eggplants - cut into rounds/roundels
  • 1/2 cup Extra Virgin Olive oil
  • salt & crushed black pepper to taste
  • 1 LB/454 grams shredded Mozzarella cheese
  • 1.5 tbsp Italian seasoning mix - dry basil, thyme & oregano
  • Fresh flat leaf parsley for garnish - cut thin/chiffonade

Ingredients For Tomato Sauce

  • 2 cups tomato sauce
  • 1/2 tsp roasted garlic powder
  • Salt, crushed black pepper & red chili powder to taste. You can use paprika instead for less heat
  • 1/2 tbsp Italian seasoning

Instructions
 

  • Preheat oven to 375*F
  • Layer large sheet pan with parchment paper
  • Slice 2 Eggplants into thick roundels & spread them on the sheet pan
  • Drizzle olive oil, sprinkle salt & pepper on eggplant slices, on both sides
  • Bake eggplant slices in oven for 20 minutes - turning once after 10 mins
  • While eggplant is baking prepare sauce my mixing ingredients listed above for sauce in a bowl, set aside
  • After 20 minutes remove eggplant from oven. Let cool for 20 minutes
  • Next coat inside of an oven proof casserole dish with some of the seasoned tomato sauce
  • Place baked eggplant slices on top of sauce - first layer
  • Sprinkle with Italian seasoning mix
  • Layer with shredded Mozzarella cheese generously
  • Place remaining eggplant slices on top of the ones in the baking dish - 2nd layer Repeat same process again
  • Now place casserole dish in the oven. Bake for 375* F for 15 minutes
  • Walla! Your delicious Cheesy Baked Eggplant dish is done!
  • Transfer 1 Baked Eggplant stack to a plate
  • Garnish with freshly chopped flatleaf parsley. Bon Appetit!

Greek Souvlaki-How To Make Souvlaki Kebabs

I have made this awesome Greek Souvlaki by marinating pork tenderloin in white wine vinegar, herbs & seasonings. After being grilled these kebabs go on a warm Greek Pita Bread garnished with onion, tomato & smothered with home made Tzatziki sauce. Simply delicious!

Ingredients
  

Main Ingredients

  • 2 large Pork tenderloins - cut into medallions
  • 2 whole Greek pork loins - toasted warm in a pan
  • 1 medium Onion - thinly sliced
  • 1 medium Tomato - thinly sliced
  • 2 tbsp Home made tzatziki sauce-recipe link in Notes below

Ingredients For Soulaki Marinade

  • 6 tbsp White wine vinegar
  • 1 cup olive oil
  • 1.5 Juice from fresh lemon
  • Few sprigs of rosemary and thyme - leaves plucked
  • Salt & Crushed black pepper to taste

Instructions
 

Instructions to Marinade Pork Tenderloin and Cook Souvlaki

  • Soak 2 wooden skewers for 30 mins then thread pork tenderloin pieces - 8 per skewer
  • Add pork tenderloin skewers to the marinade, refrigerate for 2 hours or more
  • Spray olive oil on a non stick stove top grilling pan
  • Heat pan on high flame then place pork tenderloin skewers
  • Cook for 2 minutes per side, 3 if you like them well done
  • Remove from pan and place over warm Greek pita bread
  • Top with onion & tomato slices then smother with Tzatziki sauce
  • Wallah! Your Greek Souvlaki/Greek Street Food is ready!

EASY TO MAKE & SO DELICIOUS! My Carne Asada tacos are made with skirt steak marinated in cumin powder, red chili powder, lime juice and salt. They are served on warm flour tortillas & garnished with onion, tomatillo salsa and cilantro. These tacos taste amazing!

  • Bowl for Marinating Tacos, Grill Pan

Ingredients
  

For Cooking Carne Asada

  • 1 pound skirt steak - marinated in a bowl, covered overnight, or at least for 4 hours in refrigerator
  • 2 tbsp cooking/veg. oil

Ingredients For Marinating Skirt Steak

  • 2 tbsp fresh lime juice
  • 1 tbsp cumin powder
  • 1 tbsp red chili powder - use less if you want it too spicy
  • salt to taste

Ingredients For Garnish

  • 6 tbsp tomatillo salsa - store bought or home made
  • 1/2 onion - chopped
  • some fresh cilantro leaves

Instructions
 

  • Cut skirt steak into large pcs so that it fits in a nonstick Grill Pan
  • Note: If you are going to grill it on a large outdoor grill you don't to cut it
  • Marinate skirt steak in marinade ingredients listed above
  • Next preheat a Grill Pan.
  • Once grill pan is smoking spray it with cooking oil
  • Now place skirt steak in grill pan
  • Grill in batches if necessary, for 2 minutes per side
  • Once skirt steak has nice sear and is cooked transfer to cutting board
  • Let the skirt steak rest for 5 minutes prior to slicing it
  • While steak is resting warm up 3 flour tortillas in a new pan
  • Place warm tortillas on a serving dish
  • Now slice the grilled Skirt Steak/Carne Asada against the grain
  • Put sliced skirt steak on top of the 3 tacos in equal portions
  • Garnish tacos with tomatillo salsa, chopped onion & fresh cilantro
  • Wallah! Your delicious Carne Asada Tacos are ready!

Notes

Grill Carne Asada/Skirt Steak before you are going to eat/serve the tacos. Do not refrigerate!
