Pesto Pasta-How To Make Fresh Basil Pesto-Rigatoni With Pesto Recipe

Basil Pesto Pasta
Equipment
- Large pot to boil pasta, mixer/blender, bowls
Ingredients
Ingredients For Cooking Pasta
- 10 ounce Dry Rigatoni pasta
- 12 cups Water to boil/cook pasta
- 1 tbsp salt
Ingredients To Make Fresh Basil Pesto
- 1 bunch Fresh Basil leaves
- 1/2 cup Toasted Pine nuts -toast for 2 mins in a pan
- 3/4 cup Grated Parmesan cheese
- 2 cloves garlic
- 3/4 cup Extra Virgin Olive oil
- 1 tsp salt
Instructions
To Boil/Cook Rigatoni Pasta
- Bring water to boil in large pot, add salt and rigatoni pasta
- Cook pasta for 10 minutes or until el dente,/per instructions on packet
- Set aside 1/2 cup of pasta water, then drain cooked pasta, set aside
To Make Fresh Basil Pesto
- While Pasta is cooking, add all ingredients for Fresh Basil Pesto to a mixer/food processor, except for olive oil and half the grated Parmesan
- Pulse mixture to a coarse consistency while drizzling in olive oil
- Transfer Basil Pesto to a bowl and stir in remaining grated Parmesan cheese
To Serve Pesto Pasta
- Add 2 TBSP of basil pesto to a serving bowl
- Add a TBSP of pasta water, then add some rigatoni pasta
- Mix well to coat evenly, then sprinkle with grated Parmesan cheese
- Repeat process with remaining pasta
- Bottle remaining Pesto in a jar and refrigerate for future use
