An easy to make delicious Couscous recipe that packs lot of flavor and is healthy too!

Equipment

  • Non stick pan

Ingredients
  

  • 2 tsp olive oil
  • 1 onion chopped
  • 3 cloves garlic chopped
  • 1 cup couscous grain
  • 1/2 cup Parmesan cheese mix grated Parmesan cheese mix ed with 1 tbsp crumbled blue cheese, dry oregano and basil
  • 3 tbsp chopped pine nuts
  • 1 tsp red paprika
  • salt and crushed black pepper to taste
  • 1.5 cups water
  • 1 tbsp butter
  • 1/2 cup kale chopped/chiffonade

Instructions
 

  • Heat olive oil in non stick pan
  • Add onions, saute for 2 minutes then add garlic, saute for a minute
  • Next add couscous to the pan mixing it well with the onion garlic mixture, then add butter
  • Mix well , add kale, salt, crushed black pepper & paprika. Stir well
  • Now add water incorporating it with other ingredients in the pan. Cook for 2 minutes then remove from stove and cover with lid
  • Take lid off after 2 minutes, by now all the moisture will have been absorbed by couscous
  • Fluff couscous with a fork and transfer it to a plate

The Parmesan, blue cheese and herbs mix along with garlic give it an Italian flavor.
Adding Kale gives it a freshness and pine nuts give it a nice crunch!
