How to make Kung Pao Chicken

Ingredients
- 2 tbsp vegetable oil
- 1 lb chicken breast cut into 1/2 inch pieces
- 2 tbsp soy sauce
- 1/4 tsp white pepper powder
- 1 tbsp corn starch
- 6 dry red chili peppers whole
- 1 onion chopped
- 1 green bell pepper chopped
- 2 stalks celery
- 3 green onions cut in small pieces
- 4 cloves garlic chopped
- 1/4 cup peanuts
- 2 tbsp oyster sauce
- 2 tbsp cornstarch slurry 2 tbsp water added to cornstarch to make a slurry
- 3 tbsp chicken stalk
- 1 tsp sesame oil
- salt to taste
- 1 tbsp cornstarch to coat the chicken prior to cooking it
Instructions
Marinade
- Add chicken breast pieces in a mixing bowl, add white pepper powder and soy sauce to it. Mix well and set aside for an hour
Cooking Instructions
- In a screaming hot wok add vegetable oil, swirl to coat then add marinated chicken pieces. Cook chicken for 3 minutes, tossing it continuously with a spatula so that it doesn't burn. Remove to a plate or bowl once done
- Next add dry red peppers, saute for a minute then add onions, bell peppers, cook for a minute & add garlic, celery & green onions. Now add peanuts, toss to mix then add oyster sauce and soy sauce. Saute to mix everything evenly.
- Add cornstarch slurry, mix well then add chicken stock. Now toss in the cooked chicken back to the wok. Adjust color and taste by adding soy sauce/oyster sauce as necessary.
- Finally, add sesame oil, saute for 2 more minutes and turn off the heat. Your Kung Pao chicken is ready to be plated! Transfer to plate. Enjoy!
