Chorizo and Eggs
Equipment
- Cast iron skillet
- Non stick pan
Ingredients
- 2 tbsp vegetable oil
- 1 lb chicken chorizo sausage
- 1 onion chopped
- 1 tortilla
- 1 egg fried
- 1/4 cup cilantro chopped
- 1/2 cup Mexican cheese shredded
Instructions
- Add vegetable oil to preheated cast iron skillet. Swirl pan to coat evenly
- Next add chorizo sausage to the skillet. We need to take the sausage out of its casing first
- Start breaking down the sausage with the spatula, mincing it to very small pieces
- In a separate non stick pan warm and brown 1 tortilla. Transfer it to a plate once done
- Saute/mix the chorizo sausage as it releases all the oils n juices. Add chopped cilantro to it
- Fry one egg in non stick pan in oil, flipping it on the other side to ensure even cooking
- Remove the fried egg once done and place it on top of the chorizo sausage after its cooked
- Serve the Chorizo and egg in the cast iron skillet with tortilla to keep it warm
