Equipment

  • Cast iron skillet
  • Non stick pan

Ingredients
  

  • 2 tbsp vegetable oil
  • 1 lb chicken chorizo sausage
  • 1 onion chopped
  • 1 tortilla
  • 1 egg fried
  • 1/4 cup cilantro chopped
  • 1/2 cup Mexican cheese shredded

Instructions
 

  • Add vegetable oil to preheated cast iron skillet. Swirl pan to coat evenly
  • Next add chorizo sausage to the skillet. We need to take the sausage out of its casing first
  • Start breaking down the sausage with the spatula, mincing it to very small pieces
  • In a separate non stick pan warm and brown 1 tortilla. Transfer it to a plate once done
  • Saute/mix the chorizo sausage as it releases all the oils n juices. Add chopped cilantro to it
  • Fry one egg in non stick pan in oil, flipping it on the other side to ensure even cooking
  • Remove the fried egg once done and place it on top of the chorizo sausage after its cooked
  • Serve the Chorizo and egg in the cast iron skillet with tortilla to keep it warm
