Chinese Fried Rice
Equipment
- wok or saucepan
Ingredients
- 2 tbsp vegetable oil canola, other
- 2 scallions/spring onions finely chopped
- 1 cup brown mushrooms sliced
- salt and crushed black pepper to taste
- 2 eggs scrambled
- 2 cups basmati rice precooked in pressure cooker - 1 cup rice/1.5 cups water for 12 minutes. It will fluff up to 2 cups once cooked.
- 2 tbsp soy sauce
Instructions
- Heat veg. oil in preheated wok or sauce pan. Swirl pan to coat evenly
- Add spring onions/scallions saute for a minute, next add mushrooms saute for 2 minutes. Remove from wok
- Add beaten eggs to work, scramble, remove once done
- Next add precooked rice to wok and stir fry it for 2 minute. Add soy sauce, mix well
- Now add veggies back to wok, add chili sauce, mix well then add scrambled eggs
- Cook for 2 minutes mixing everything well, adjust taste with salt and crushed black pepper.
- Wallah! Your Chinese Fried dish is ready! Transfer to serving dish. Enjoy!
