Pan Seared Scallops and Lobster
Equipment
- Non stick pan
- Pot for boiling lobster tail
Ingredients
- 3 scallops
- 1 lobster tail cooked in boiling water for 7 minutes, out of the shell
- salt and crushed black pepper to taste
- 2 tbs olive oil
- 2 cloves garlic chopped
- 2 tbsp butter
- 1/4 cup white cooking wine
- 1 tsp lime juice
- chopped parsley to garnish
Instructions
- Add olive oil to preheated non stick pan. In the mean time boil lobster tail in a pot for 7 minutes. Once lobster is cooked take it out of the shell
- Add scallops to the pan, larger side down, sear for couple of minutes. Baste the top with hot olive oil from the pan with a spoon, remove & set aside
- Next add butter to the pan to deglaze it. Now add garlic, saute for a minute then add white wine. Wait for the alcohol from the wine to evaporate
- Once we have the wine reduction sauce lets add the scallops back to the pan, seared side up. Next add freshly chopped parsley & with a spoon baste the top seared side with the wine sauce. Now add lobster tail to the pan. Saute for 2 more minutes.
- Wallah! Our Pan seared scallops & lobster tail is now ready. Transfer to a plate, pour the wine/butter sauce on top, garnish with chopped parsley.
