Grilled veggie panini sandwich, loaded with sauted vegetables, pepper jack cheese and Chimichurri/mayo spread

Equipment

  • Non stick pan
  • griddle

Ingredients
  

  • 2 slices of Italian sandwich bread Pane Turano or any other
  • 2 tbsp olive oil
  • 3 tbsp butter
  • 1 tsp dry basil leaves crushed
  • 1 tsp dry oregano leaves crushed
  • 2 tbsp Chimichurri/mayo sauce
  • 1 cup mushrooms sliced
  • 1 cup onions sliced
  • 1 cup cucumber chopped
  • 1 green bell pepper/capsicum chopped
  • salt and -pepper to taste

Instructions
 

  • Saute all veggies in a not stick pan for 3 minutes in olive oil, butter, salt n pepper, dry basil and oregano leaves
  • Spread butter on both slices of bread. On bottom slice layer sauted veggies, pepper jack cheese. On top slice apply Chimichurri sauce spread, cover and cook on high setting in griddle. Once done transfer to plate.
