How to make Pasta in Alfredo Sauce
Pasta in Alfredo Sauce
Equipment
- large pot for boiling pasta
- sauce pan to make Alfredo sauce
Ingredients
- 1/2 lb farfalle/bow tie pasta dry/ready made from a box
- 2 cups milk i have substituted milk for heavy cream to make it lighter
- 1/2 cup grated Parmesan cheese
- salt, black pepper and red chili flakes to taste
- 3 tbs butter
- 1/2 onion finely chopped
- 2 cloves garlic chopped
- 2 tbsp freshly chopped basil leaves
- 8 cups water to boil pasta
- 1/2 cup shredded trio of Parmesan, Romano and Asiago cheeses
Instructions
To Cook Pasta
- Heat 8 cups of water in large pot. Once it starts boiling add salt then add farfalle/bow tie pasta. Cook for 8 minutes or until el dente
To Make Alfredo Sauce
- Heat saucepan, add butter. Once butter melts add chopped onion, saute for 2 minutes on medium heat, then add garlic. Saute for a minute more
- Add milk ( or heavy cream if you want it to be thicker and cook faster), bring to boil then bring it down to a simmer
- Next add parmesan cheese, stir well until it melts then add salt, crushed black pepper and red pepper flakes to taste. Now add trio of parmesan, romano and asiago cheeses. Simmer for 2 minutes, stirring to incorporate the cheeses in the sauce.
- Add 3 ladles of salty pasta water to the sauce. The startch in the pasta will give it more body and flavor. Remove pasta from boiling water pot, drain and add to alfredo sauce in saucepan
- Finally let it simmer for a minute more, mix well then transfer to a serving bowl. Garnish with remaining chopped basil leaves. Wallah! your Pasta in Alfredo Sauce is ready!
