Equipment
- pot for boiling pasta
- Non stick pan
- oven ready casserole dish
Ingredients
- 2 tbsp olive oil
- 1 onion chopped
- 3 cloves garlic
- 6 swirls fettuccine dry pasta swirls - 1 packet/box
- salt and crushed black pepper to taste
- 1 tsp red pepper flakes
- 2.5 cups tomato sauce 1 large can
- water to boil pasta
- 2 tsp butter
- 1.5 cups mushrooms baby bella or any brown mushooms - chopped
- 1 cup shredded mozzarella cheese
- 1/4 cup fresh basil leaves chopped
- 6 white eggs poached
Instructions
- Heat non stick pan, add onions saute for 2 minutes. Now add garlic saute for a minute
- Simultaneously boil dry fettuccine swirls in a large pot in boiling water. Add salt, cook for 10 minutes or until el dente
- Next add mushrooms and saute for couple of minutes then add salt, black pepper & butter
- Mix well then add fresh basil, tomato sauce, and red pepper flakes, stir well.
- Check fettuccine pasta, once el dente transfer to dutch oven.
- Now ladle marinara sauce from pan on to each swirl of cooked fettuccine, top with mozzarella cheese and some chopped basil. Place the casserole dish in the oven for 10 minutes until cheese melts.
- Finally, remove pasta from oven transfer, 3 swirls to a plate, each topped with a poached egg. Garnish with salt n pepper to taste and remaining basil leaves
