Masala Fish Curry - Catfish Steak Curry

  • 1 Nonstick Saucepan
  • 1 Mixing bowl

Ingredients
  

Main Ingredient

  • 4 Catfish Steaks about 1.5 LBS

Ingredients For Seasoning Catfish:

  • 1 tsp red chili powder
  • 1/4 tsp turmeric powder
  • salt to taste

Ingredients For Making Masala Paste

  • 1 tsp cumin seeds
  • 2 dry red chili peppers
  • 4 cloves of garlic
  • 1/4 tsp turmeric powder
  • 1 tbsp cumin-coriander powder mix
  • 3 tbsp water

Ingredients For Cooking Masala Catfish Curry:

  • 3 tbsp cooking oil
  • 2 red onions - grated & liquid drained
  • Masala Paste
  • 5 tbsp coconut milk
  • 450 ml water
  • 1 tsp hand crushed dry fenugreek leaves
  • salt to taste
  • fresh cilantro/coriander leaves for garnish - finely chopped

Instructions
 

Instructions For Seasoning Catfish Steaks

  • Season fish with ingredients listed above for seasoning. Set aside

Instructions For Preparing Masala Paste

  • In a hot nonstick sauce pan roast cumin seeds, dry red pepper & garlic
  • Remove from pan and add to grinder/blender
  • Add turmeric powder, red chili powder, cumin-coriander powder and water
  • Grind to a paste, set aside

Instructions For Cooking Masala Fish Curry

  • In same saucepan add 3 cooking oil
  • Sear Catfish Steaks - 2 minutes per side. Remove from pan, set aside
  • Once oil is hot stir fry grated onions for 2 minutes on low heat
  • Add Masala Paste. Stir Fry for 2 more minutes
  • Now stir in coconut milk. Let simmer for 2 minutes then add coconut milk
  • Mix well, season with salt as necessary
  • Add dry fenugreek leaves, mix well then add water
  • Give it quick stir then cover and simmer for 10 minutes
  • Open lid, check catfish steaks for doneness
  • Add half the chopped cilantro/coriander leaves, mix well
  • Let curry/gravy thicken for a minute then transfer to serving bowl
  • Wala! Your delicious Masala Fish Curry is ready! Enjoy with steamed rice

Ingredients
  

  • 1 LB boneless chicken thighs bitesize pieces
  • 1 Cup vegetable oil
  • 1 Cup plain yogurt - whipped
  • 2 onions - sliced
  • 2 bay leaves
  • 6 cloves
  • 1 Tsp whole black pepper
  • 1 Tbsp garlic paste
  • 1 Tbsp green chili & ginger paste
  • 8 cashew nuts
  • 8 almonds
  • 1 Tsp red chili powder
  • 1/4 Tsp turmeric powder

Instructions
 

  • In a large nonstick saucepan heat veg. oil
  • Reduce flame to medium, add onions. Fry until golden brown
  • Remove fried onions from pan, drain on paper towel. Set aside
  • Next add bay leaves, cloves & black pepper & garlic paste
  • Saute for few seconds then add green chili/ginger paste
  • Grind cashew nuts & almonds together in a grinder. Add to saucepan
  • Mix well & saute for 2 minutes
  • Now add chicken pieces. Mix well then add cumin-coriander powder
  • Add red chili & turmeric powders, salt to taste. Mix well
  • Now reduce heat and stir in yogurt, making sure it does not curdle
  • Cover saucepan with lid and simmer on medium-low for 15 minutes
  • Remove lid and transfer Chicken Korma to serving dish
  • Wallah! Your delicious restaurant style chicken korma is ready! Bon Appetit!
