In a hot frying pan add 2 cups cooking oil
Fry sliced onion in oil, once hot, until golden brown
Remove fried onions, set aside
In a large saucepan/pot add 2 TBSP cooking oil
Add half the fried onion slices & bay leaves
Next add minced garlic. Saute for 15 seconds
Now add green chili-ginger paste, mix well
Add lamb pcs and sear on high for 3 minutes, until brown
Add biryani masala. Stir fry for 2 minutes to coat lamb pcs well
Toss in diced tomatoes, saute for 2 minutes,
Reduce flame to low then mix in yogurt quickly
Let simmer for 2 minutes then add 450 ml water. Mix well
Now cover with lid and cook/simmer lamb curry for 1 hour or until tender
