CILANTRO SOUP - CHINESE STYLE

Ingredients
- 2 tbsp veg. oil
- 4 cups water
- 1/2 cup finely chopped onions
- 1/2 cup finely chopped cabbage
- 1/2 cup finely chopped carrots
- 2 cloves finely chopped garlic
- 1 tbsp minced ginger
- 1/2 tsp crushed black pepper
- 1 finely chopped green chili
- 1.5 cups chopped cilantro
- 3 tbsp corn starch slurry add 3 tbsp water to corn starch to make slurry
- 2 stalks green/spring onions
Instructions
- Heat oil in saucepan. Reduce heat to medium low and add onions, saute.
- Next add garlic, saute for 30 seconds then add ginger. Saute mixture for a minute.
- Now add green chili, cabbage, carrots. Saute for 2 more minutes then add salt & black pepper to taste.
- Now add water, mix well. Next add corn starch slurry, mix well. Then add cilantro.
- Cook Cilantro soup for about 3 minutes. Now pour mixture in blender/mixer and use pulse button or soup puree button to bring consistency in texture. Soup should not feel like its just water with bits of veggies. Nor should it feel too smooth.
- Pour back the mixture from the blender back to the sauce pan. Cook on low for 2 more minutes.
- Finally, plate soup in a bowl and garnish it with fresh cilantro leaves and chopped spring onion. Wallah! Your delicious Chinese Cilantro Soup is ready!
