Ingredients
MAKING GRITS
- 1 CUP GRITS
- 2 CUPS WATER
- 1 CUP CHEDDAR CHEESE - SHREDDED
- 1/4 TSP GARLIC POWDER
- SALT & CRUSHED BLACK PEPPER TO TASTE
PREPARING SHRIMP
- 1 LBS SHRIMP - MEDIUM SIZE PEELED, DEVEINED, TAIL LEFT ON
- 1/2 PC JUICE OF FRESH LEMON
- 1 TBSP CUMIN POWDER
- SALT, PAPRIKA & BLACK PEPPER TO TASTE
- BACON FAT RENDERING
- 3 STRIPS UNCOOKED BACON CHOPPED INTO SMALL PIECES
Instructions
COOKING GRITS
- ADD 1 CUP OF GRITS IN 2 CUPS OF BOILING WATER. ADD GARLIC, SALT & PEPPER.
- STIR EVERYTHING, ADD CHEDDAR CHEESE. REDUCE HEAT TO MEDIUM LOW & COOK FOR 5 MINUTES, COVERED.
COOKING BACON
- IN A NON STICK PREHEATED PAN ADD BACON. COOK ON LOW UNTIL CRISPY BROWN. TRANSFER BACON TO A BOWL. SET ASIDE. LEAVE BACON FAT/RENDERING IN PAN.
COOKING SHRIMP
- ADD SEASONED SHRIMP THAT WAS SET ASIDE TO THE SAME PAN. COOKS QUICKLY ON BOTH SIDES IN BACON RENDERING. ABOUT 2 MINUTES. DO NOT OVERCOOK SHRIMP! TRANSFER TO BOWL.
PLATING SHRIMP & GRITS
- SPREAD 2 LADLES OF COOKED GRITS TO SERVING PLATE. DRIZZLE BACON FAT RENDERING ON IT FROM PAN. ADD COOKED SHRIMP ON TOP. ADD COOKED CRISPY BACON BITS. GARNISH WITH CHOPPED FLAT LEAF PARSLEY.
