BLACKENED CATFISH - NEW ORLEANS STYLE

Equipment
- Cast Iron Skillet, Mixing bowl
Ingredients
- 1 catfish fillet
- 2 tbsp veg. oil - Canola or other
- 1 tbsp Chef Purdhomme's seafood magic blend mix. Use more if you want to spice it up!
- 1/2 lemon juice
- 1/2 sliced onion - for garnish/plating - optional
- 1 tomato - for - garnish/plating - optional
Instructions
- Rub seafood magic rub on both sides of catfish fillet. Cover mixing bowl with plastic. Refrigerate for 2 hours or more.
- Heat a cast iron skillet on high heat. Once hot add veg. oil.
- Once the oil starts to smoke place seasoned catfish fillet in pan. Cook on high for 2 minutes per side. Total 4 minutes.
- Transfer Blackened Catfish to plate. Garnish with onion and tomato slices around the fish.
