BLACKENED CATFISH – HOW TO MAKE NEW ORLEANS STYLE CATFISH

BLACKENED CATFISH - NEW ORLEANS STYLE

Catfish fillet first seasoned with New Orleans style seafood herb & spice blend. Then refrigerated overnight. Finally seared in a smoking hot cast iron skillet.,cooked to perfecting in few minutes. Squeeze fresh lemon juice on it and it tastes heavenly!

Equipment

  • Cast Iron Skillet, Mixing bowl

Ingredients
  

  • 1 catfish fillet
  • 2 tbsp veg. oil - Canola or other
  • 1 tbsp Chef Purdhomme's seafood magic blend mix. Use more if you want to spice it up!
  • 1/2 lemon juice
  • 1/2 sliced onion - for garnish/plating - optional
  • 1 tomato - for - garnish/plating - optional

Instructions
 

  • Rub seafood magic rub on both sides of catfish fillet. Cover mixing bowl with plastic. Refrigerate for 2 hours or more.
  • Heat a cast iron skillet on high heat. Once hot add veg. oil.
  • Once the oil starts to smoke place seasoned catfish fillet in pan. Cook on high for 2 minutes per side. Total 4 minutes.
  • Transfer Blackened Catfish to plate. Garnish with onion and tomato slices around the fish.
  • Wallah! Your delicious, Blackened Catfish - New Orleans Style is ready!

If you want to make more than 1 fillet: Prepare 4 fillet at a time by using 4 to 6 tbsp of the seafood Magic blend. Cook 2 at a time in the cast iron skillet.
