THAI MASSAMAN CURRY
fish sauce - optional, red onions, garlic, ginger, lemon grass, scallions, fresh basil & roasted peanuts. Simply delicious with steamed Jasmine rice!
Equipment
- not stick saucepan
Ingredients
- 1.5 lbs Angus beef cut into small cubes
- 2 tbsp veg. oil
- 1.5 cup coconut milk
- 2 tbsp fish sauce optional
- 1 large potato cut in to small cubes
- 2 tbsp massaman curry paste store bought
- 1/2 cup water or as needed
- 2 tsp sugar white or palm sugar
- salt to taste
- chopped basil leaves
- 1/2 onion red or yellow, finely chopped
- 3 cloves garlic finely chopped
- 2 tbsp lemon grass chopped after removing outer hard layer
- 3 tbsp tamarind juice soak dry tamarind in water for 30 minutes, strain
Instructions
- In a non stick sauce pan add veg. oil add massaman curry paste, saute for 2 minutes. Add onions
- Saute for a minute then add garlic. Cook for a minute more ten add beef cubes. Mix well
- Next add lemon grass, saute then add 1/2 the coconut milk. Mix well. Add salt to taste, sugar
- Now add potato cubes, fish sauce, tamarind juice and remaining coconut milk, mix well. Add some fresh basil and water
- Mix well then cover pan with lid and cook on low for 45 minutes or until meat is cooked and tender
- Wallah! Your Thai Massaman Curry is ready! Transfer to a bowl on top of steamed Jasmine rice
