Ramen Noodles with Chicken

Ingredients
Marinade for Chicken
- 1 chicken breast sliced into half & marinated in soy sauce, sesame oil, aji-mirin & sambal hot sauce
- 2 tbsp soy sauce
- 1 tsp sesame oil
- 2 tbsp Aji Mirin Japanese rice wine
- 1 tsp sambal hot sauce
For Ramen
- 4 cups Ramen broth store bought, made with kelp & other ingredients
- 1 Traditional Udon Noodles dry, 1 bundle of 6 in a packet
- 3 scallions/spring onions thinly sliced
- 2 cloves chopped garlic
- 1/2 inch grated ginger
- 2 tbsp veg. oil
- 1/2 tsp Sambal hot sauce
Instructions
Chicken Marinade
- Slice 1 chicken breast in 2 pieces, add soy sauce, sesame oil, Aji Mirin, Sambal hot sauce. MIx well refrigerate for 2 hours or more
Cooking Instructions
- Heat grilling pan and add 1 marinated chicken breast. Cook on medium flame for 3 minutes then turn and cook other side. Remove from pan to chopping board once done
- Simultaneously, in a medium size preheated dutch oven add veg. oil,half the scallions, saute then add garlic and ginger. Mix well for a minute then add Ramen broth, and Sambal hot sauce. Stir well then add Udon Noodles. Cook for 3 minutes until noodles are cooked.
- Next slice the grilled chicken breast against the grain into thin slices.
- Finally, ladle Ramen broth & Noodles to a Bowl, add grilled/sliced chicken on top and garnish with remaining scallions/spring onions.
