Chiang Mai Noodle Soup-Best Khao Soi Recipe

My amazingly delicious Thai Chiang Mai Noodle Soup Recipe! Chicken thigh chunks first cooked in a coconut milk, chicken stock & red curry paste curry paste. Then assembled with Egg noodles and garnished to perfection!

  • Large Pot for cooking noodles, Nonstick saucepan

Ingredients
  

Ingredients for Making Soup

  • 13.5 Oz. can Coconut milk
  • 1 Tbsp Red Curry Paste - store bought
  • 1/2 Tsp Ground turmeric
  • 1 Chicken Thigh - cut onto bite size chunks
  • 1 Cup chicken stock
  • 1 Tbsp cooking oil
  • 1 Tbsp dark soy sauce
  • 1 Tbsp fish sauce
  • 1 Tbsp lime juice
  • salt & crushed black pepper to taste
  • 200 Grams Egg Noodles
  • Ample water to boil Egg Noodles

Ingredients for Garnish

  • 1 Shallot - thinly sliced
  • 1 Scallion/Green Onion - thinly sliced
  • 3 Cloves of garlic - thinly sliced and fried
  • Fresh Cilantro/Coriander leaves - roughly chopped

Instructions
 

  • Boil egg noodles for 3 minutes, drain & rinse with cold water. Set aside
  • In a preheated nonstick saucepan add cooking oil
  • Once oil is hot add garlic, fry until light brown. Remove and set aside
  • Reduce heat to medium, add 1/3rd coconut milk . Cook for a minute
  • Once oil starts to separate add red curry paste & ground turmeric
  • Mix well, stirring often then add chicken chunks
  • Cook for 2 minutes coating chicken pcs completely
  • Add chicken stock, mix well then add fish sauce, dark soy sauce lime juice
  • Season with salt & black pepper to taste
  • Now reduce heat to low and simmer curry for 7 minutes
  • Next warm up egg noodles that we cooked earlier in warm water, drain
  • In a serving/soup bowl add noodles and red curry with chicken
  • Garnish with scallion & shallot slices, fried garlic & fresh cilantro
  • Wallah! Your delicious Chiang Mai Noodle Soup is ready!

ALOO GOBI - SPICY, FLAVORFUL POTATOES & CAULIFLOWER

Potatoes & Cauliflower cooked in mustard oil, green chili, ginger & a slew of aromatic spices & herbs.
Veggies can't get better than this! A spicy, delicious dish that is sure to tantalize your taste buds!

  • large non stick saucepan

Ingredients
  

  • 1 head/whole cauliflower cut into 2 inch pieces hard stem in the middle removed
  • 2 potatoes cut into small cubes
  • 4 tbsp mustard oil
  • 2 tbsp cumin seeds
  • 1/4 tsp Asafoetida called Hing, available at Indian grocery stores
  • 2 green chilies chopped finely
  • 1/4 tsp turmeric powder
  • 2 tbsp slivered fresh ginger
  • 2 tbsp cilantro chopped
  • 3 tbsp cumin & coriander powder mix
  • 3 tsp red chili powder
  • 1/2 tsp garam masala available at Indian grocery stores
  • 1 tomato finely chopped
  • 1/2 onion finely chopped
  • 1/2 tsp dry mango powder known as Amchur available at Indian stores
  • 1/2 squeeze fresh lemon
  • 1/2 cup water as needed
  • salt and black pepper to taste

Instructions
 

  • Heat saucepan on medium flame, add mustard oil
  • Once mustard oil starts to smoke add cumin seeds. Once they start crackling add Asafoetida
  • Add turmeric powder & onion. Saute for 2 minutes, then add green chili & ginger slices
  • Start adding red chili powder, cumin/coriander mix, garam masala & tomatoes
  • Saute for 2 to 3 minutes until tomatoes have blended in, and the mixture has become a smooth gravy. Add salt and crushed black pepper to taste
  • Now add potatoes and cauliflower to the pan, stirring constantly to mix the with the gravy
  • Add water, mix well then add half the cilantro. Continue cooking for 15 more minutes. Stir every few minutes to ensure the veggies get cooked evenly and don't stick to the pan
  • Once potatoes and cauliflower are cooked, remove from pan into a serving bowl
  • Finally, garnish with remaining cilantro and ginger slices. Wallah! Your Aloo Gobi is ready.
