In a preheated non stick sauce pan heat mustard oil
Once oil is hot reduce heat to medium, add chopped onion
Saute for 2 minutes until translucent then add minced garlic
After 30 seconds add cinnamon stick, green cardamom & cloves
As soon as cumin seeds start spluttering add tomato sauce. Mix well
Next add red chili powder, ground turmeric & cumin-coriander powder mix
Add ground cashew nuts (powder)
Now add white/button mushroom slices
Add salt to taste, mix well
Saute for 2 minutes then stir in 1/2 cup water
Reduce heat to low & simmer for 2 minutes
Now add 1/4 cup water and garam masala, simmer for a minute more
Walla! Your delicious Mushroom Masala is ready!
Transfer to serving bowl/dish, garnish with slivered ginger slices
Enjoy with Naan or other Indian flatbread or steamed Basmati rice
