Soak Basmati rice water for 10 minutes
Peel and slice potatoes into roundels
Boil 6 cups of water in a large saucepan
Add 2 tbsp canola oil to the boiling water
Now drain soaked rice and add it to the saucepan
Cook rice until el dente about 7 minutes
Drain water from cooked rice, remove from saucepan, set aside
Next layer potato roundels in sauce pan
Drizzle with olive oil, then layer half of the cooked rice over it
Add half the butter to rice
Next layer half the lima beans and fresh dill
Repeat the process to have a second layer of rice, butter, lima beans and fresh dill
Wrap saucepan lid in a towel and place it over the saucepan
Simmer on medium low flame for 5 minutes
Wala! Your delicious Dill Rice with Lima Beans is ready!
Transfer to serving dish and serve with cooked potato roundels
