Aloo Paratha: Mash potatoes seasoned with herbs n spices, then stuffed & rolled in Wheat & All Purpose Flour flatbread dough. Pan cooked to perfection in veg. oil and smothered with butter! Makes a perfect meal - breakfast or main course. Can be enjoyed with Yogurt Mint Chutney, ketchup or by itself! Enjoy with friends and family.

Ingredients for Paratha Stuffing
- 5 potatoes - cooked in microwave for 15 mins, in a zip-lock bag
- 1 cup freshly chopped cilantro/coriander
- 1/2 cup freshly chopped mint - optional
- 1 chopped onion
- 1 tbsp cumin seeds
- 1.5 tbsp amchur - dry mango powder available at Indian grocery stores or Amazon
- 0.5 tbsp chaat masala available at Indian grocery stores or Amazon
- 2 tbsp green chili/ginger paste
- 1/4 dry fenugreek leaves - crushed
- salt and black pepper to taste
For Making Paratha Dough
- 2 cups all purpose flour
- 1 cup wheat flour
- 3 tbsp vegetable oil
- water as needed
- salt to taste
Making Paratha Dough
Add both flours, salt, few drops of veg.oil to mixing bowl. Add water to build dough to a medium consistency. Neither too soft nor to hard. Kneed dough well. Once done add few more drops of veg. oil, kneed for 1 more minute then cover and set aside.
For Cooking Parathas
Heat non stick pan. In the meantime make 2 inch balls out of the dough one at a time. Flatten dough balls and roll them into a flat pie. Now add about 1.5 table spoon of potato filling on top. Bring all sides of the dough pie up and pinch to form a round package. Remove excess dough and roll the round package to flatten it again. Watch video below for visualizing how its done.
Place rolled out dough pie to heated pan, one paratha at a time. Wait for a minute then flip.
Next add few drop of oil on the cooked side and rub it all over the back of a spoon.
Repeat process on other side. Once brown on both sides spread butter to both sides and set aside on a serving platter. Repeat this process until all Aloo Parathas are done.
Wallah your Aloo Parathas are ready! Serve them either with or without Mint Chutney or Ketchup.
