Aloo Palak - Steam Fried Potatoes & Spinach
Potatoes are first pan fried with onion, garlic, spices & seasonings, then steamed with spinach leaves moisture. The end result: a delicious potato & spinach dish that will have you begging for more!

- 1 large bunch/200 grams of baby spinach leaves - cut into thin ribbons
- 3 potatoes - peeled, cut into small cubes & soaked in water for 30 minutes
- 1 red onion - chopped
- 3 cloves of garlic - chopped into larger pieces
- 1 tbsp ginger - roughly chopped
- 2 tbsp mustard oil
- 1 tbsp cumin seeds
- 2 dry red chilies - halved
- Pinch of turmeric powder
- 1/2 tsp Red Kashmiri chili powder
- 1/2 tsp coriander/dhania powder
- salt to taste
Heat a saucepan to medium high
Add mustard oil. Once oil is hot add cumin seeds
As soon as cumin seeds starts spluttering/popping add dry red chilies
Now add potato cubes and stir fry for 3 minutes until they golden brown
Push potatoes to one side, add chopped onion and saute for 1 minute, then add minced garlic & ginger. Mix well
Toss in turmeric powder, Kashmiri chili powder, coriander powder and salt
Mix well then layer baby spinach over potatoes
Cover with lid and let the steam from spinach cook & flavor the potatoes
After 3 minutes open lid, mix well. Simmer for 2 more minutes
Your delicious Steam Fried Aloo Palak is ready!
