Preheat oven to 375*F
Layer large sheet pan with parchment paper
Slice 2 Eggplants into thick roundels & spread them on the sheet pan
Drizzle olive oil, sprinkle salt & pepper on eggplant slices, on both sides
Bake eggplant slices in oven for 20 minutes - turning once after 10 mins
While eggplant is baking prepare sauce my mixing ingredients listed above for sauce in a bowl, set aside
After 20 minutes remove eggplant from oven. Let cool for 20 minutes
Next coat inside of an oven proof casserole dish with some of the seasoned tomato sauce
Place baked eggplant slices on top of sauce - first layer
Sprinkle with Italian seasoning mix
Layer with shredded Mozzarella cheese generously
Place remaining eggplant slices on top of the ones in the baking dish - 2nd layer Repeat same process again
Now place casserole dish in the oven. Bake for 375* F for 15 minutes
Walla! Your delicious Cheesy Baked Eggplant dish is done!
Transfer 1 Baked Eggplant stack to a plate
Garnish with freshly chopped flatleaf parsley. Bon Appetit!
