Tomato Soup
Ingredients
- 20 tomatoes chopped
- 2 onions chopped
- 3 cloves garlic chopped
- 2 stalks celery chopped
- 5 black pepper corns
- 2 tbsp toasted cumin seeds
- 6 leaves basil chopped
- 2 tbsp olive oil
- 2 tbsp butter
- salt and crushed black pepper to taste
- 1/2 cup heavy whipping cream
Instructions
- In large saucepan add olive oil, swirl pan to coat, add onions saute for a minute then add garlic
- Now add butter, saute for a minute, then add cumin seeds, celery and black pepper corns
- Mix above ingredients well then add in the tomatoes cooking them for few minutes. Add fresh basil leaves, salt & pepper to taste. Cook for 2 more minutes then transfer mixture to blender in batches until all of the tomato mixture turns to pulp.
- Next strain the tomato pulp mixture from the blender in a strainer in a bowl. Toss away remaining residue from the strainer
- Add blended tomato soup back to sauce pan, simmer for 3 to 5 minutes. Now add most of the heavy cream. Wallah your soup is ready to be plated! In a soup bowl ladle in a serving of soup, add crushed red pepper to taste, add some croutons. Finally drizzle in remaining heavy cream as garnish.
