NOODLE SOUP WITH SHRIMP AND MUSHROOMS

Equipment

  • non stick saucepan, ladle

Ingredients
  

  • 2 tsp sesame oil
  • 1 whole onion thinly sliced
  • 2 cloves garlic minced
  • 1 inch ginger peeled and slivered
  • 4 stalks spring/green onions cut into 1 inch pieces
  • 1/4 cup cilantro chopped
  • 1.5 cups brown mushrooms sliced
  • 1 lb medium shrimp peeled and deveined
  • salt and crushed black pepper to taste
  • 1 pkt lo mein noodles dry
  • 16 oz chicken stock unsalted
  • 4 tbsp soy sauce light
  • 1/2 cup Chinese cooking wine

Instructions
 

  • Add sesame oil to heated sauce pan, swirl pan to coat
  • Next add onions, saute until light brown in color
  • Now add soy sauce and half of the sliced ginger, stir wel,l then add chicken stock
  • Stir everything in the saucepan then add mushrooms and salt per taste
  • Next add 2 cups of water, green chili pepper and black peppers
  • Stir well then add Chinese cooking wine. Now add lo mein noodles
  • After 2 minutes add shrimp and cook further for more minutes
  • Transfer to a soup bowl and garnish with remaining ginger slices and cilantro
