Meat Sauce Rigatoni Recipe I Hot Italian Sausage Rigatoni

Equipment

  • 1 large pot to boil pasta
  • 1 large saucepan

Ingredients
  

  • 1 lb Rigatoni pasta
  • 1 lb hot Italian sausage without casing
  • 8 cups water to boil pasta
  • Salt to season pasta water
  • 2 tbsp olive oil
  • 1 small red onion - finely chopped, you can use any onion you like
  • 2 large cloves of garlic - minced
  • 2 cups tomato sauce
  • 1 tsp dry basil leaves
  • 1 tsp dry oregano
  • 1 tsp salt or to personal taste
  • 1/2 tsp crushed black pepper
  • 1 tsp red pepper flakes - you can add more or less
  • 4 tbsp grated parmesan cheese

Instructions
 

  • Heat saucepan on high, once hot add olive oil
  • Add chopped onion, stir fry for 2 minutes on medium
  • Toss in minced garlic, mix well
  • Now add hot Italian sausage, cook for 3 minutes until cooked
  • Next add all the seasonings listed above
  • Cover & simmer for 5 minutes
  • In the meantime boil ample water to cook rigatoni pasta
  • Add1 tsp salt to boiling water than add pasta
  • Cook for 10 minutes, until al dente
  • Add 2 ladles of pasta water to meat sauce in pan. Mix well
  • Next drain cooked rigatoni pasta & add to saucepan with sauce
  • Mix well, cover with lid & simmer for 2 more minutes
  • Uncover and add 2 tbsp grated parmesan cheese
  • Mix well & transfer to serving bowl
  • Sprinkle pinch of oregano and 2 tbsp grated parmesan cheese
  • Your delicious Rigatoni with Spicy Italian sausage & tomato sauce is ready! Bon Apettit!
