Meat Sauce Rigatoni Recipe I Hot Italian Sausage Rigatoni
Equipment
- 1 large pot to boil pasta
- 1 large saucepan
Ingredients
- 1 lb Rigatoni pasta
- 1 lb hot Italian sausage without casing
- 8 cups water to boil pasta
- Salt to season pasta water
- 2 tbsp olive oil
- 1 small red onion - finely chopped, you can use any onion you like
- 2 large cloves of garlic - minced
- 2 cups tomato sauce
- 1 tsp dry basil leaves
- 1 tsp dry oregano
- 1 tsp salt or to personal taste
- 1/2 tsp crushed black pepper
- 1 tsp red pepper flakes - you can add more or less
- 4 tbsp grated parmesan cheese
Instructions
- Heat saucepan on high, once hot add olive oil
- Add chopped onion, stir fry for 2 minutes on medium
- Toss in minced garlic, mix well
- Now add hot Italian sausage, cook for 3 minutes until cooked
- Next add all the seasonings listed above
- Cover & simmer for 5 minutes
- In the meantime boil ample water to cook rigatoni pasta
- Add1 tsp salt to boiling water than add pasta
- Cook for 10 minutes, until al dente
- Add 2 ladles of pasta water to meat sauce in pan. Mix well
- Next drain cooked rigatoni pasta & add to saucepan with sauce
- Mix well, cover with lid & simmer for 2 more minutes
- Uncover and add 2 tbsp grated parmesan cheese
- Mix well & transfer to serving bowl
- Sprinkle pinch of oregano and 2 tbsp grated parmesan cheese
