Pan Seared Salmon With Spinach & Mushrooms

This Pan Seared Salmon in a lemon-butter sauce with spinach & mushrooms tastes amazingly delicious!

Equipment

  • 1 Nonstick Saucepan

Ingredients
  

  • 2 small salmon fillets
  • 400 grams bella/brown mushrooms - sliced
  • 2 cups baby spinach leaves - prewashed
  • 1 shallot - minced
  • 2 large cloves of garlic - minced
  • 2 tbsp unsalted butter
  • 1tbsp fresh lemon juice
  • 1 tbsp dry basil & oregano mix
  • salt & crushed black pepper to taste
  • 3 tbsp cooking oil

Instructions
 

  • Heat 2 tbsp cooking/veg. oil in a nonstick saucepan on medium high flame
  • Add shallots-stir fry until translucent then add garlic. Saute for 30 seconds
  • Next add sliced mushrooms, saute mushrooms for 2 minutes
  • Now add baby spinach leaves. Stir fry until spinach begins to wilt
  • Toss in dry basil & oregano, salt & crushed black pepper
  • Mix well and transfer veggies to serving dish
  • Cover with aluminum foil to keep warm
  • In the same pan add 1 tbsp cooking/veg. oil
  • Once oil is hot sear salmon fillets on both sides - 2 minutes per side
  • Add unsalted butter to pan. Once butter melts add lemon juice
  • Spoon lemon-butter sauce from pan over Salmon
  • Place seared/cooked salmon fillets on top of spinach & mushrooms
  • Drizzle remaining lemon-butter sauce from pan onto salmon fillets
  • Walla! Your delicious Pan Seared Salmon with Spinach & mushrooms is ready. Bon Appetit!

My Step by Step, delicious Shrimp Tostadas recipe for you! Yellow corn tortillas toasted on high heat in a hot pan instead of frying. Next tostadas are layered with red diced onion, tomato, spicy shrimp, avocado, Mexican cheese & pickled jalapeno pepper slices. Finally garnished with fresh cilantro & Crema!

  • 1 Mixing bowl
  • 1 nonstick pan/skillet

Ingredients
  

Ingredients For Shrimp Marinade

  • 2 cloves finely chopped garlic
  • 1 Tsp ground cumin
  • 1/2 tsp ground red pepper
  • 1 Tbsp lime juice
  • Salt & crushed black pepper to taste

Ingredients For Cooking & Assembling Shrimp Tostadas

  • 3 Yellow corn tortillas
  • 15 Medium Easy-Peel Raw Shrimp (deveined)
  • 2 Tbsp Olive oil
  • 1 Medium red onion - diced
  • 1 Tomato - diced
  • 1 Avocado - peeled and diced
  • 1/2 Cup shredded Mexican cheese
  • 9 Jalapeno slices - from store bought jar
  • Fresh cilantro leaves

Instructions
 

  • Place shrimp & all ingredients for marinade in a bowl. Mix well, set aside
  • Preheat a large nonstick frying pan on high heat
  • Once hot place corn tortillas in frying pan
  • Toast for 1.5 minutes per side, or until they firm up and become tostadas
  • Remove tostadas from pan, set aside
  • Next reduce heat to medium setting & add olive oil to pan
  • Swirl pan to coat evenly then place shrimp in it
  • Cook shrimp on both sides until cooked but not overcooked - 3 mins total
  • Remove shrimp from pan, once cooked, set aside
  • Place 3 tostadas that we set aside earlier to a serving dish/platter
  • Layer with diced red onion, tomato, cooked shrimp, avocado & jalapenos
  • Garnish with shredded Mexican cheese & cilantro leaves
  • Drizzle Crema over the tostadas
  • Walla! Your delicious Shrimp Tostadas are ready!

Ingredients
  

Ingredients for Dredging/Coating Chicken

  • 2 LBS chicken breast flattened & cut into 2 inch pieces
  • 3 TBSP all purpose flour
  • Salt & crushed black pepper to taste

Other Ingredients

  • 2 TBSP cooking oil
  • 6 TBSP unsalted butter
  • 6 Large cloves of garlic - minced
  • 1 Cup chicken stock
  • 1 TBSP lemon juice
  • 1 TBSP dry oregano
  • salt & crushed black pepper to taste
  • Freshly chopped flat leaf parsley for garnish

Instructions
 

  • In a bowl dredge/coat chicken with ingredients listed above for it
  • Set dredged chicken aside for 20 minutes
  • Next cooking oil to preheated saucepan
  • Once oil is hot sear/brown dredged chicken pieces for 3 to 4 minutes
  • Remove seared chicken pieces from saucepan once done, set aside
  • Next add butter to pan after reducing heat to medium setting
  • Once butter has melted toss in minced garlic, stir fry for 30 seconds
  • Now deglaze pan by adding chicken stock, mix well
  • Add dry oregano, salt & crushed black pepper
  • Add seared chicken back to the saucepan, mix well, cook for 3 minutes
  • Adjust seasonings to taste then add some freshly chopped parsley
  • Mix well & transfer to serving bowl/dish
  • Garnish with chopped parsley before serving
