In same saucepan add 3 cooking oil
Sear Catfish Steaks - 2 minutes per side. Remove from pan, set aside
Once oil is hot stir fry grated onions for 2 minutes on low heat
Add Masala Paste. Stir Fry for 2 more minutes
Now stir in coconut milk. Let simmer for 2 minutes then add coconut milk
Mix well, season with salt as necessary
Add dry fenugreek leaves, mix well then add water
Give it quick stir then cover and simmer for 10 minutes
Open lid, check catfish steaks for doneness
Add half the chopped cilantro/coriander leaves, mix well
Let curry/gravy thicken for a minute then transfer to serving bowl
