Shakshuka - Poached Eggs In Tomato Sauce
Eggs poached in tomato & bell pepper sauce, flavorfully seasoned. Enhanced with Feta cheese this easy to make dish is amazingly delicious!

- 2 TBSP Olive oil
- 5 Eggs
- 1 Onion - chopped
- 2 Cloves Garlic - minced
- 5 Tomatoes -peeled & diced or two 14.OZ cans of diced tomatoes
- 1 Red bell pepper/capsicum diced
- 1 TSP Red chili powder
- 1 TBSP Cumin powder
- Salt & Crushed black pepper to taste
- 1/2 Cup Or 6 cubes of Feta cheese
- Few cilantro leaves for garnish
In a hot nonstick saucepan add olive oil
Once oil is hot add onion, saute for 2 minutes
Next add garlic, saute for 30 seconds
Now add bell pepper, mix well. Saute for 2 minutes then add tomatoes
Add salt, black pepper and red chili powder. Mix well
With back of spatula crush tomatoes
Then cover and let simmer on low for 15 minutes
Now open lid and add eggs, one at a time
Cover and let them poach for 5 minutes in the tomato sauce
Open lid add feta cheese pieces. Cover and simmer for minute more
Your Shakshuka is done! Open lid , garnish with cilantro, transfer to dish
